The Telegraph FOOD EDITORIAL by Steve Ryan

Steve Ryan recently shot for the Telegraph Magazine. Steve and the crew travelled to north Wales to the beautiful peninsula of Ynysgain Fawr on Llyn to shoot the story behind a cheddar cheese that is matured down a 500ft slate mine. The care and love that goes into producing this cheese is reflected in Steve’s narrative in the images - from the land the cows are farmed on to the hand stamped wax casing around the cheese.  He also displays delicious recipes, which work perfectly with the cheese. 

'To visit the cheese is awe-inspiring, especially if you glimpse the grey roofs of the caverns, soaring cathedral-like above you. Water flows or drips constantly, ferns grow in unexpected pockets, and the floor, even when cleared, is a hazardous terrain of leftover slate – or, as Merrells puts it, 'like walking over an enormous collection of loose cheeseboards’.'
